What is cheese made of?

Cheese can contain a variety of ingredients, depending on what you're trying to achieve. But, in general, cheese is made by separating water from milk. Let's take a closer look at the ingredients found in this product.
If you want to make cheese at home, you will need:
- milk;
– lemon juice;
- salt.
If you want a creamier texture, you can add a small amount of fresh cream. This should be done after the milk has curdled and you've added the salt.
Commercial cheese is made from four main ingredients:
- milk;
– rennet;
- sourdough;
- salt.
Milk
This is the most important product from which cheese is made. Milk can be any kind: cow's, goat's, sheep's, camel's, and even buffalo's. At home, of course, it's easiest to make cheese from cow's milk because it's the most readily available. Skim milk powder can also be used.
Leaven
This is the product that causes milk to ferment. Cheese starter is the same as yeast for wine or beer. The microorganisms, a type of fungus, found in the starter give cheese its characteristic flavor.
Rennet
This ingredient is used to curdle milk. After its addition, the milk separates into two parts: solid curds and liquid whey. Traditionally, rennet is obtained from calf stomachs, but a vegetarian substitute is also available. The amount of rennet required depends on the type of cheese being made. To produce a soft cheese, less rennet is used, while to produce a hard cheese, more is used.
Salt
Salt enhances the flavor of cheese, makes it firmer, and acts as a preservative. Salt is typically added to curdled milk before it is poured into molds. Along with salt, piquant herbs and seasonings such as parsley, sage, black pepper, and others can be added to the cheese. These herbs can be fresh or dried. Some types of cheese are also flavored with beer or cider.
Cheese is often coated with a waxy casing, which can come in a variety of colors. Food coloring is often added to the casing of factory-produced cheese. Homemade cheesemakers rarely use coloring.
