Freeze the coconut mixture in popsicle molds or paper cups, inserting popsicle sticks once the ice cream has set slightly.

Whisk together 1 can (400g) of coconut milk with the grated zest of 1 lime, the juice of 2 limes, 1/4 cup of powdered sugar, and 1/4 cup of shredded coconut. Divide the mixture among small popsicle molds or 100ml paper cups; insert wooden sticks. Freeze for several hours or until the ice cream is set.
