This peach ice cream tastes like a frozen smoothie, only it's even better thanks to the oats, which add a nutty flavor. A single serving of this healthy ice cream contains only 80 calories, making it the perfect addition to your regular breakfast.

Ingredients:

  • 1 large ripe peach, coarsely chopped (about 1 1/4 cups)
  • 1/2 cup unsweetened almond milk (refrigerated, short shelf life)
  • Juice of half a lemon
  • 2 tablespoons of honey
  • 2 tbsp. oatmeal
  • 1 tbsp. peach jam
  • Special equipment: 4 ice cream stick molds with a capacity of 90-120 ml.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Combine peach, almond milk, lemon juice, honey, oats, jam and a pinch of salt in a blender and blend until smooth.
  • Step 2
  • Divide the mixture evenly among four popsicle molds. Freeze until completely set, at least 8 hours, or preferably overnight. Let stand at room temperature for a few minutes before removing from the molds. Ice cream can be stored in the freezer for up to 2 weeks..
