Go back Print version

Time: 20 min.

This unusual sauce will appeal to anyone looking to try new barbecue sauces and new combinations. Two types of mustard—grain and Dijon—are simmered with spices, apple cider vinegar, and peach preserves, which imbue the sauce with a pleasant fruity sweetness. Stir in a spoonful of bourbon, and its flavor and aroma will unfold. This peach-mustard sauce pairs perfectly with any grilled meat and poultry. It's especially good with pork.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 3 tablespoons unsalted butter
  • 2 tbsp. chopped onion
  • 2 cloves garlic, crushed
  • 3 tablespoons of apple cider vinegar
  • 0.5 cup grainy mustard
  • 1/4 cup Dijon mustard
  • 3/4 cup peach jam or preserves
  • 1 tbsp bourbon
  • 0.5 tsp coarse salt

We recommend

Cooking the dish according to the recipe:

  1. Melt the butter in a saucepan over medium heat. Add the onion and garlic and cook until the onion is translucent, about 3 minutes. Add the vinegar and cook until it has almost completely evaporated and the mixture resembles wet sand, about 4 minutes.
  2. Stir in both mustards and peach jam.

    Note

Bourbon is added at the very end to enhance the sauce's flavor. This sauce pairs well with pork, but also goes well with chicken, duck, or veal.

Simmer over low heat, stirring, until the jam has dissolved, about 1 minute. Remove from heat and stir in the bourbon and salt.
    Exit: 1 1/4 tbsp.
