This is a strong Italian alcoholic drink made from herbs with the addition of a bitter flavoring. Campari bitters, available in 20.5%, 21%, 25%, or 28% ABV, are bottled and have a bright red color, a spicy aroma, a bitter taste, and a sweet aftertaste. Campari bitters, 10% ABV, are diluted with soda water and are bright red in color with a sweet and sour taste.

During production, the ingredients of Campari undergo a process of maceration in distilled water, then aging in ethanol (syn., wine spirit) with added sugar, and the resulting mixture undergoes repeated filtering. The most important ingredients that give Campari its spicy, bitter taste are bitter orange, citrus oils, and wormwood extract. Ginseng root, rhubarb, and pomegranate extract are also added; cinchona bark extract (cascarilla) imparts a sharp, slightly astringent flavor to Campari bitters.

Bitter Campari is served as a thirst quencher mixed with juice or wine in a 1:2 ratio in tall glasses. As an aperitif, bitter Campari is served neat with a late lunch or dinner, accompanied by a light snack: roasted nuts, almonds, or fruit in small aperitif glasses. Bitters are also added to black coffee.
