Hokey Pokey Candies

I've included it in your menu because it's a great gift for a party. Better than flowers, which need to be put in a vase, and better than chocolate, which people smile politely at but then put away. And no one can resist a hokey pokey. The ingredients I listed aren't very numerous, just enough to fill a small mold 12 cm in diameter and 6 cm deep. But any more and you'll be forced to visit the dentist.

At first I was going to say it wasn't as fun as it sounded, but then I changed my mind. Hokey pokey is a Cornish term for honeycomb. This spongy dessert is delicious eaten by breaking off golden pieces or crumbling them into vanilla ice cream.

This will take about 3 minutes. - Remove the pan from the heat, add the baking soda, and watch the syrup transform into a sizzling cloud of light, airy gold. Immediately transfer the mixture to a piece of parchment or greased foil.
