The cuisine of the ancient Mayan culture was an exotic blend of local grains and meats. The preparation of these ingredients was quite intriguing. Meat was skewered and roasted until done on homemade stone ovens, and also stewed and simmered with spices. Roasted meat was a common delicacy at various festivals and celebrations.

The Mayan Empire reached its peak in the 6th century CE. At that time, it spanned the territories of modern-day Mexico, Guatemala, the Sierra Madre, and part of El Salvador. Several years before the Spanish conquest, the empire was in crisis and in severe decline, unlike the Aztecs and Incas, who inhabited parts of Mexico and Central America.

Nevertheless, the Mayan civilization was renowned for its unique language and culture. Traces of their customs and traditions can still be found in modern culture, although they have undergone significant changes.

One of the very interesting aspects of the Mayan empire was their cuisine.


Cultivated crops

Corn

This is one of the traditional, most basic foods of the Maya. It was grown in enormous quantities, as agriculture was the main source of food there. Various types of corn were grown in the fields. The corn was harvested, washed, and ground into various types of flour, which was then used to bake bread and make other dishes.

The Maya loved squash, a type of pumpkin with a very delicate flavor. They made flatbreads and fillings from it.

Beans

Beans were the other staple food of the Maya, after corn. Although black and red beans were the most popular, the Maya also enjoyed other varieties.

Chili pepper

The Mayans used green, yellow, and red peppers in their cuisine. They used them to create a variety of spices for a wide variety of dishes.

Sweet potato

Sweet potatoes were also very popular among the Mayans. Today, they remain one of the most beloved foods in Mexico.
