A simple and quick recipe that will transform leftover rice into a truly Cajun dish in just a few minutes. Cajun cuisine is a subcategory of American cuisine popular in the state of Louisiana. Traditional ingredients in Cajun cuisine include seafood, rice, and vegetables. For this dish, you'll need cooked rice. Sauté the shrimp in aromatic oil, then add the vegetables, herbs, and rice. Stir and heat through, adding a Cajun seasoning of paprika, garlic, and hot pepper, and serve.

Ingredients:

  • 1 tbsp (15 g) butter
  • 2 tbsp. l. olive oil
  • 3 cloves garlic, crushed
  • 2 tsp Cajun seasoning
  • 450 g large shrimp, peeled and deveined, leaving tails on
  • 4 plum tomatoes, chopped
  • 2 bunches green onions, chopped
  • 3 cups of cooked white rice
  • 3 tablespoons chopped parsley
  • Lemon wedges for serving (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large skillet over medium-high heat, heat the butter, olive oil, and garlic until fragrant, about 1 minute. Add the seasoning and shrimp and cook, stirring, until the shrimp begin to curl, about 1 minute. Season with salt and pepper.

  • Add the tomatoes and green onions and cook, stirring, for about 1 minute. Add the rice and 1/4 cup water and continue cooking until the rice is heated through and the shrimp are opaque, about 3 minutes more. Stir in the parsley and serve with lemon, if desired.
