Pizzelle wafer cookies

Complexity: easily
Quantity: 24-48 pcs.
In European countries, Christmas baking is associated not only with the aromas of spicy spices and almonds, but also with subtle hints of anise. In Italy, for example, this includes crispy wafer cookies called pizzelle. They are considered one of the oldest types of cookies, having been baked several centuries before Christ in special cast-iron presses over an open fire. Nowadays, special, more convenient electric waffle irons have been invented for pizzelle. These produce cookies that are round and flat (hence the name) and decorated with various patterns. During the winter holidays, they are traditionally baked with anise flavor, while at other times, only vanilla is added.

Cooking the dish according to the recipe:
- In a large bowl, whisk together the sugar, butter, milk, vanilla, anise extract (if using), and eggs. Add the flour, baking powder, and salt and continue whisking until the dough is smooth. Let it sit at room temperature for at least 1 hour to allow the dough to rest and absorb the liquid.
- Heat the waffle iron and bake the pizzelle according to the manufacturer's instructions.
