Sugar cookies are a popular winter holiday treat in Western countries. They are baked in large quantities and decorated in a variety of ways: with themed shapes, icing, and sprinkles. Lemon volcanoes are a type of sugar cookie. The dough is rolled into logs or sausages, rolled in a mixture of sugar and lemon zest, and then cut into circles. After baking, the cookies resemble a volcano, with a "crater" at the cut end, framed by a sugar crust. Lemon sugar cookies are crisp and delicious, with a refreshing citrus note. Bake them and enjoy with a cup of aromatic black tea.

Knead the dough as shown Classic Shortbread Cookies with Icing, but with 1/4 cup granulated sugar and lemon zest; omit the baking powder as well. Cool. Pulse 1/4 cup granulated sugar and 1 tablespoon lemon zest in a food processor.

Roll out two logs of dough 2.5 cm thick and roll them in lemon sugar. Place the logs in the freezer for 20 minutes, then cut into 2.5 cm thick circles. Bake for 20-25 minutes at 160°C.
