These simple, quick, yet delicious vanilla cookies in the shape of the popular yo-yo toy are baked from shortcrust pastry, then sandwiched together with a thick layer of frosting. The cookies are crumbly and melt-in-your-mouth, so they should be served immediately after being sealed with the filling, to prevent them from becoming soggy. However, these Yo-Yo cookies are so delicious, they'll fall apart without leaving any leftovers.


Ingredients:


Dough
  • 185 g butter
  • 1/3 cup powdered sugar
  • 1.5 cups of flour
  • 1/3 tbsp. dry custard concentrate

Filling
  • 0.5 cup powdered sugar
  • 2 tbsp (30 g) butter
  • 2 tsp. dry custard concentrate
  • 0.5 tsp vanilla essence
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cookie: Beat the butter with the powdered sugar, add the sifted flour and custard concentrate. Mix well.
  • Step 2
  • Form the dough into balls and place them on greased baking sheets. Press the tops with a fork to form cookies. Bake at a moderate temperature for 15 minutes.
  • Step 3
  • Filling: Whisk all ingredients together. Use just enough filling to hold the cookies together.
