A batter made with sour milk or kefir keeps the chicken juicy. The eggs and sour milk are gently mixed, not stirred, and the batter is filled with bubbles thanks to the sour milk, making it airy. A versatile appetizer, chicken in batter can replace pan-fried chicken, which tends to dry out the chicken and require braising in wine to finish it. This method of pan-frying chicken in batter is popular among cooks who want to see the best results from their work and are careful not to spoil the product. The chicken should be soaked in the sour milk for a couple of hours. The sour milk marinade makes the meat softer and more tender, while the spicy sauce adds a piquant and spicy flavor. The appetizer's delicious, golden crust and rich aroma will leave no one indifferent.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 chicken, cut into 16 pieces
  • 1 tbsp coarse salt
  • 2 tsp ground black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup hot sauce
  • 1/2 cup sour milk
  • 3 large eggs
  • Peanut oil for frying
  • 2.5 cups of flour
  • Special equipment: culinary thermometer

Cooking the dish according to the recipe:


  1. Season the chicken on both sides with salt, pepper, and garlic powder. In a bowl large enough to fit all the chicken pieces, whisk together the hot sauce, buttermilk, and eggs. Add the chicken and toss to combine.

    Cover and marinate in the refrigerator for 2-4 hours.
  2. Pour peanut oil into a large cauldron to a thickness of 5 cm and heat to 180 ⁰C.

    Dredge the chicken pieces in flour until evenly coated. Transfer them to the hot oil, cover, and fry for 5 minutes. Remove the lid and turn them over. Cook uncovered for another 5 minutes.

  3. Preheat oven to 230 ⁰С.

    Transfer the pieces to a baking sheet. Bake for 10 minutes. Serve immediately, hot.
