Sushi rolls with shrimp in batter and ginger sauce

A recipe for sushi rolls with crispy battered shrimp and sesame-ginger sauce.


Ingredients:

  • 2 cups Japanese rice
  • 8 large shrimp, peeled and deveined, with tails on (straighten with your hands)
  • Sushi vinegar
  • Salt
  • 4 large nori sheets, cut to 2/3 length
  • 1/2 greenhouse cucumber, peeled, seeded and cut into 4 long strips (the length of the nori)
  • Wheat flour
  • 2 beaten eggs
  • Panko (Japanese breadcrumbs)
  • Black sesame seeds
  • 1 avocado, cut into 8 strips
  • Wasabi paste
  • Ginger sauce (see recipe below)
  • Red pepper flakes for garnish

Sesame-ginger sauce:
  • 2 golf ball-sized pieces of ginger, peeled and sliced
  • 4 tablespoons toasted sesame seeds
  • 1 tbsp soy sauce
  • 4 tablespoons mayonnaise
  • 4 tablespoons sushi vinegar
  • 2-4 tablespoons of water
  • Juice of 1/2 lemon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cook the rice using 1 part rice to 2 parts water. You can use a rice cooker, steamer, or saucepan, according to the package instructions.

    When the rice is cooked, place it on a large baking sheet and sprinkle with sushi vinegar. Stir well, but do not crush the rice grains. Cool the rice to room temperature.
  • Step 2
  • In a large saucepan or deep fryer, heat oil to 180°C, filling halfway.

    Salt the shrimp, sprinkle them with flour, dip them in egg and bread them in panko breadcrumbsFry the breaded shrimp until golden brown. Place on a plate lined with paper towels.
  • Step 3
  • Place the nori on a cutting board, layer the rice on the black (non-shiny) side, and sprinkle black sesame seeds on top. Place it rice-side down on a bamboo mat covered with plastic wrap.

    Place 2 shrimp, 2 avocado strips, a cucumber strip, and a little wasabi in the center. Roll up. (Good luck!) Cut into 8 pieces (you'll need more than just luck here!)

    Pour the sesame-ginger sauce onto a serving plate, then place the sushi on it. Sprinkle the sauce with red pepper flakes.

    Sesame-ginger sauce: Place all ingredients in a blender. Blend on high speed until all solid ingredients are liquid.
