Nigiri sushi with fish - a detailed recipe.


Ingredients:

  • 3 and 1/3 cups short grain sushi rice (pre-rinsed)
  • 4 tbsp of water
  • 5 and 1/3 tablespoons sushi vinegar
  • Salt
  • 1 piece of toro (tesha) tuna or salmon (110 - 170 g)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Rinse the rice until the water runs clear. Strain in a colander and let sit for 30 minutes. Place the rice in a saucepan or rice cooker, add 4 cups of water, or follow your rice cooker's instructions. Bring the water to a boil.

    Reduce heat and simmer, covered. Cook for 15 minutes. Remove the lid, place a damp towel over the rice, and let cool for 10 minutes.

  • You can find sushi vinegar in the grocery section of the store, or you can easily make your own by mixing vinegar, sugar, and salt in a saucepan and heating the mixture over low heat until the sugar and salt dissolve. If you prefer a sweeter vinegar, simply add more sugar.
  • Step 3
  • Pour the sushi vinegar over the cooked rice and stir gently. You can do this in a wooden bowl for making sushi rice or in your rice cooker after turning it off. Simply pour in the vinegar, stir gently, and let it sit until the rice cools to room temperature. Leave the lid open.
  • Step 4
  • Buy fresh fish at a fish market or Japanese grocery store and ask the seller if it's safe to eat raw. Buy only sushi-grade fresh fish.

    If you use If you're using salmon, sprinkle the fish with salt and let it sit for an hour. Then rinse off the salt and place the fish in the freezer. Once frozen, thaw it and use it for sushi. Slice the fish very thinly into small pieces.

    Using your hands, press a ball of rice into a ball and place a thin slice of fish on top.
