This dish is made from leftover mahi mahi fish salad with Thai red curry.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/2 cut into 2 pieces baguette or ciabatta buns
  • 1 tbsp melted unsalted butter
  • 2 tablespoons mayonnaise
  • 2 green onions, halved lengthwise and cut into 5cm pieces
  • 1/2 carrot, coarsely grated or cut into thin strips
  • 1/2 Kirby cucumber, thinly sliced
  • 1 tbsp remaining Asian salad dressings
  • 1/2 bunch fresh cilantro or mint
  • 1/2 bunch watercress (tough stems removed)
  • Asian chili sauce (optional)
  • 2 leftover mahi mahi fillets, prepared according to recipe Mahi Mahi Salad with Thai Red Curry

Cooking the dish according to the recipe:


  1. Preheat the broiler to high. Cut the baguette or buns in half lengthwise and brush each half with a little butter. Lightly toast under the broiler in the oven for about 2 minutes.
  2. Remove the bread from the oven and spread mayonnaise on each half. Toss the green onions, carrots, and cucumber with the dressing. Top the sandwich with fish, vegetables, herbs, watercress, and chili sauce (optional).
