Ingredients:

  • 3 cups of short-grain white rice
  • 1/4 tbsp. rice wine vinegar
  • 1/4 cup sugar
  • 1 teaspoon of salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Before cooking, rinse the rice under running water until the water runs clear. Drain the water in a colander for an hour. Cook on the stovetop or in an electric rice cooker according to package instructions.
  • Step 2
  • In a small saucepan over low heat, combine vinegar, sugar, and salt. Stir gently until the salt and sugar dissolve. Cool to room temperature.
  • Step 3
  • While the rice is still warm, transfer it to a large, non-reactive bowl. Pour the vinegar mixture over the rice gradually, using a hairdryer as it cooks.

    Use a rice paddle to gently stir the rice without crushing the grains. Cover the rice with a damp cloth and keep it at room temperature until you're ready to make sushi. Do not refrigerate.
