How to Make Sushi Rice

Ingredients:

  • 2 tbsp. sushi rice or round grain rice
  • 2 cups of water, plus more for rinsing the rice
  • 2 tbsp. l. rice vinegar
  • 2 tablespoons of sugar
  • 1 tbsp coarse salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the rice in a bowl and cover with cold water. Stir the rice in the water, strain, and repeat 2-3 times until the water runs clear.

    Place the rice in a medium saucepan, add 2 cups of water, and set over high heat. Bring to a boil, uncovered. When the water begins to boil, reduce the heat to low and cover the pan with a lid. Simmer for 15 minutes. Remove from heat and let sit, covered, for 10 minutes.
  • Step 2
  • In a small bowl, combine the rice vinegar, sugar, and salt. Microwave on high for 30-45 seconds. Transfer the rice to a larger wooden or glass bowl and add the vinegar mixture.

    Mix thoroughly to coat every grain of rice. Let cool to room temperature, then use for sushi or sashimi.
