We recommend

Preparation:

    Step 1
  • Squeeze lemon juice over the avocado to prevent it from turning brown.

Line a bamboo mat with plastic wrap. Cut the nori sheets in half crosswise. Place one nori sheet, shiny side down, on the mat. Wet your fingers with water and spread about 1/2 cup of rice evenly over the nori sheet. Sprinkle the rice with sesame seeds.
  • Step 2
  • Turn the nori sheet over so the rice is on the bottom. Place 1/8 of the cucumber, avocado, and crab sticks in the center of the sheet. Take the edge of the mat closest to you and, holding the filling in place with your fingers, roll it into a tight cylinder using the mat.

Remove the mat and set it aside. Cover with a damp cloth. Repeat until all the rice is used. Cut each roll into 6 pieces. Serve with pickled ginger, wasabi, and soy sauce.
