This recipe offers a unique twist on avocado as a roll base, transforming it into a unique appetizer filled with the freshness, tenderness, and subtle nuttiness of avocado. The filling is a mixture of peanut butter and Asian-inspired sauces, firm black rice, crunchy bell peppers, and juicy ripe mango. This vibrant appetizer will be a hit with everyone. Arrange the sliced ​​rolls on a tray and serve them with cocktails at home parties.


Ingredients:

  • 0.5 cups black rice
  • 2 tablespoons crunchy peanut butter
  • 2 tablespoons hoisin sauce
  • 2 tsp. sriracha sauce
  • 2 large avocados
  • 1 cucumber, cut lengthwise into 6 strips 0.5 cm thick.
  • 1/4 red bell pepper, cut into 6 strips 0.5 cm thick.
  • 1/4 mango, cut into 6 strips 0.5 cm thick.
  • 1 lime, cut in half
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small saucepan, bring 1 cup water and the rice to a boil over medium-high heat. Cover and reduce heat to medium-low; simmer until the liquid is absorbed and the rice is tender, about 30 minutes. Remove from heat and let stand, covered, for 3 minutes. Season with salt to taste and let cool.
  • Step 2
  • Meanwhile, in a small bowl, combine peanut butter, hoisin sauce, Sriracha and 2 teaspoons water.
  • Step 3
  • Place a large sheet of plastic wrap on the counter. Very thinly slice 1 avocado lengthwise and fan them out in two overlapping rows to form a 6 x 9-inch rectangle. Position the wrap so the long side of the avocado rectangle is closest to you. Spread half the peanut sauce in a straight line across the center of the rectangle from left to right, then spread 1/2 cup of rice over the sauce. Top with a single line of cucumber, bell pepper, and mango (3 strips each). Season with salt and drizzle with a little lime juice.
  • Step 4
  • Starting from the bottom long edge, using the plastic wrap to help you roll the avocado into a tight log. Slice the roll through the plastic wrap into 2-cm-thick rolls, then remove the plastic wrap. Repeat with the remaining avocado to form another roll and slice it. Sprinkle the rolls with additional lime juice.
