Steak and avocado rolls

These unique rolls can be served as a main course or an appetizer. Strips of fried ribeye steak are wrapped in a soy wrapper along with slices of avocado, breadcrumbs, bell pepper, and spicy mayonnaise. Expect a perfect combination of flavors and textures.

Ingredients:
- 2 boneless ribeye steaks weighing 220 g each.
- 1 teaspoon ground black pepper
- 1 and 1/4 teaspoons coarse salt
- 2 tbsp. l. olive oil
- 1 tbsp. panko breadcrumbs
- 1 teaspoon black sesame seeds
- 0.5 cup mayonnaise
- 2 tablespoons Sriracha sauce
- 6-8 25cm square soy sushi wrappers.
- 1 thinly sliced avocado
- 1 yellow bell pepper, thinly sliced

Preparation:
- Step 1
- Heat a cast iron skillet over medium heat. Season the steak with pepper and 1 teaspoon of salt. Pour oil into the skillet, add the steak, and cook over medium heat or until the internal temperature reaches 130–140°F (57–60°C) on a digital thermometer, about 5 minutes per side. Transfer the steak to a cutting board and let it rest for about 7 minutes. Step 2
- Meanwhile, add breadcrumbs, sesame seeds, and the remaining 1/4 teaspoon salt in a small skillet and heat over medium heat. Cook, stirring frequently, until the breadcrumbs are golden brown. Transfer to a bowl and set aside to cool. Slice the steak into thin strips. Step 3
- Combine mayonnaise and Sriracha sauce in a medium sauce bottle and shake well. Step 4
- Place the soy wrapper on a clean work surface in front of you. Pipe a strip of hot mayonnaise onto the edge closest to you. Lay 2 avocado slices lengthwise, touching each other. Lay a few pepper slices on top, covering the entire edge. Pipe a strip of hot mayonnaise onto the peppers, then sprinkle with about 2 tablespoons of breadcrumbs. Step 5
- Place a few slices of steak on top of the breadcrumbs. Carefully roll the rolls away from you. Press another thin line of mayonnaise on the opposite edge of the wrapper to seal the roll. Repeat with the remaining wrappers and ingredients. Step 6
- Cut each roll into pieces approximately 4 cm in size. Place the rolls on a serving platter.
