Ingredients:


Fish filling for tacos:
  • 900 g skinless halibut, cut into strips 15 x 1.5 cm.
  • 1 cup flour
  • 1 teaspoon of salt
  • Corn tortillas (see recipe)
  • 2 cups shredded cabbage
  • 2 cups tomatillo salsa, optional
  • Pickled jalapeños for garnish, optional

Beer batter:
  • 1 cup flour
  • 1 teaspoon of salt
  • 0.5 tsp ground black pepper
  • 1 cup dark Mexican beer*

Sour cream sauce:
  • 0.33 cups mayonnaise
  • 0.66 cups sour cream
  • 1 teaspoon grated lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons of water
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Beer batter for fishCombine flour, salt, and pepper in a medium bowl. Gradually pour in the beer, whisking constantly. Set aside and let the dough rest for 15 minutes before using. Note: This dough can also be used for cooking vegetables.

    Sour cream sauceCombine mayonnaise and sour cream in a medium bowl. Add lemon zest, lemon juice, and water and whisk. Season with salt and pepper to taste (the sauce can be made ahead of time and refrigerated for up to 3 days).

  • Battered Fish Taco Filling


    In a large frying pan set over medium heat, add 3 cm of oil. Heat the oil until a deep-fry thermometer registers 180°C (350°F). Alternatively, you can dip the end of a wooden spoon into the oil; it should begin to sizzle.

    Combine flour and salt in a large bowl. Season the fish pieces with salt and pepper, then roll them in flour. Dip each piece in the beer batter on all sides. Fry in hot oil until cooked through and golden brown, about 5 minutes. Transfer to a paper towel to dry.

    Make tacos with fish filling, garnish each with sour cream sauce, cabbage, physalis salsa and jalapeño rings.
