Fish tacos with tartar sauce - a detailed recipe.


Ingredients:


For tacos:
  • 900 g skinless sea bass fillet (or other firm-fleshed white fish)
  • 2 tablespoons Worcestershire sauce
  • 4 finely chopped garlic cloves
  • 1 teaspoon of salt
  • 1 teaspoon ground pepper
  • 1 cup flour
  • 3 tbsp. vegetable oil for frying
  • 8 wheat tortillas tortilla diameter 20 cm.
  • 1 cucumber, peeled and seeded, cut into 1.5 cm pieces.
  • 2 cups arugula leaves
  • 1 cup fresh cilantro
  • Zest of 2 oranges
  • Lime wedges for serving

For the tartar sauce:
  • 2 finely chopped garlic cloves
  • 1-2 chipotle peppers, finely chopped, seeded in adobo sauce
  • 0.75 cups mayonnaise
  • 1 green onion, finely chopped, white and green parts only
  • 1 tbsp fresh lime juice
  • Salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine all the tartar sauce ingredients in a small bowl, season with salt to taste. Cover and refrigerate until needed.

    Rinse the fish under cold water and pat dry with paper towels. Cut into 2.5 cm (1-inch) pieces and place in a bowl with Worcestershire sauce, garlic, salt, and pepper. Coat the fish on all sides. Cover with plastic wrap and refrigerate for 20 minutes to 4 hours.
  • Step 2
  • Place flour in a shallow dish and toss the fish pieces in it until evenly coated. Heat oil in a large frying pan over medium-high heat. (To test if the oil is hot enough, place a small piece of bread in the oil; it should immediately sizzle.) Carefully drop a few fish pieces at a time into the oil, shaking off any excess flour first. Fry until golden brown, 4-6 minutes, then transfer to a paper towel-lined plate.
  • Step 3
  • Meanwhile, heat a medium skillet over medium-high heat. Add a tortilla and cook for 10-20 seconds on each side. Transfer to a plate and cover with a kitchen towel. Repeat with all the tortillas.

    Spread the prepared mixture on warm tortillas. tartar sauceAdd a few cucumber slices and top with 3-4 pieces of fish, a few arugula and cilantro leaves, and some orange zest. Serve with lime wedges and more tartar sauce.
