If you've never eaten completely raw meat before, now's the time to try tartare! The natural flavor of fresh filet mignon is incomparable, and a few extra ingredients like capers, red onion, fresh parsley, hot sauce, and mustard only enhance it. Keep in mind that raw meat is not recommended for children, pregnant women, the elderly, and those with weakened immune systems. When buying steak tartare, let the butcher know you'll be eating it raw and ask for the highest quality cut.

Ingredients:

  • 900 g filet mignon, diced*
  • Half a small red onion, finely diced
  • 2 tbsp. capers, dried
  • 1 tbsp chopped fresh parsley
  • 1 tbsp Dijon mustard
  • 2 tbsp. l. olive oil
  • 2 tsp Worcestershire sauce
  • 2 tsp hot sauce (recommended: Tabasco)
  • 1 large egg yolk
  • Grilled country bread, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the filet mignon in a food processor and process until smooth. Transfer to a chilled bowl.
  • Step 2
  • Add the onion, capers, parsley, Dijon mustard, butter, Worcestershire sauce, hot sauce, and egg. Season with salt and pepper to taste. Serve immediately with toasted country bread.
