Tender and juicy fried salmon fillet is served as a sandwich on a soft bun smeared with homemade tartar sauce, along with thin slices of tomato and crisp lettuce. To make the sauce, simply combine mayonnaise with pickles and fresh herbs. This recipe uses the perfect proportions of ingredients, resulting in an incredibly delicious sauce – the perfect complement to the salmon. Serve the sandwiches with fries and enjoy a hearty and delicious lunch.

Cooking the dish according to the recipe:

  1. Position racks in the upper and lower thirds of the oven; preheat the oven to 425°F (220°C). Toss the fries on a baking sheet with 1 tablespoon of olive oil and sprinkle with seasoned salt. Bake on the bottom rack, stirring occasionally, until golden brown, about 25 minutes.
  2. Meanwhile, prepare the tartar sauce.:

In a small bowl, combine mayonnaise, pickle and brine, green onions, parsley and a pinch of coarse salt.

  3. Season the salmon with coarse salt and black pepper. In a large oven-safe nonstick skillet, heat the remaining 1 tablespoon olive oil over high heat. Reduce the heat to medium, add the salmon, and cook until golden brown on the bottom, about 5 minutes. Transfer the skillet to the top rack of the oven and bake until the salmon is opaque and firm, about 3 minutes.
  4. Spread tartar sauce on the buns. Top with the salmon halves (cut into pieces if needed), lettuce, and tomatoes. Top with the bun tops. Serve with fries and the remaining tartar sauce for dipping.
