This sugar snap pea and salmon pasta recipe is a perfect dinner for the whole family. It's quick and easy to prepare, and it's also healthy. Peas, a source of protein, vitamins, and minerals, are very beneficial for the body and add a unique flavor to the dish. Together, the tender salmon fillet and peas make this pasta tender, nutritious, and delicious.

Ingredients:

  • 340 gr. fettuccine noodles
  • 225g sugar snap peas, deveined, cut into thirds
  • 4 tbsp (60 g) butter
  • 1 shallot, thinly sliced
  • 1 340g wild salmon fillet, skinless, cut into 5cm pieces.
  • 1/4 cup chopped mixed herbs (such as dill, parsley, and/or chives)
  • Juice of 1/2 lemon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Bring a pot of salted water to a boil. Pour in the pasta and cook according to package directions, adding the peas two minutes before the end of cooking. Reserve 1 cup of the cooking water and drain the rest.
  • Step 2
  • Meanwhile, heat 2 tablespoons (30 grams) of butter in a large skillet over medium-high heat. Add the shallots and sauté, stirring, until slightly softened, about 2 minutes. Add the salmon, season with 3/4 teaspoon of salt and a few grinds of pepper. Sear the fillets on both sides until cooked through, about 3 minutes. Transfer to a plate.
  • Step 3
  • Add the pasta and peas to the pan with 1/2 cup of cooking water, the remaining 2 tablespoons (30 g) butter, herbs, and lemon juice. Cook, stirring, for about 1 minute, adding more cooking water if necessary to coat the pasta completely. Season with salt and pepper. Top with the salmon.
