If you've got your hands on a fresh piece of tuna, enjoy all the delights of this delicious and healthy raw fish with this tartare appetizer. Its main ingredients are tuna and avocado. Both are cut into equal-sized cubes, mixed together, and dressed with a wonderful Asian blend of lime juice, wasabi, soy sauce, hot sauce, and olive oil. The avocado should be ripe to ensure a delicate texture, while toasted sesame seeds add a contrasting crunch. The finished tartare should rest for at least an hour, after which you can enjoy its flavor spread on crackers.

Ingredients for the recipe:
- 1.6 kg very fresh tuna steak
- 1 and 1/4 cups olive oil
- Grated zest of 5 limes
- 1 cup freshly squeezed lime juice
- 2.5 tsp wasabi powder
- 2.5 tbsp soy sauce
- 2 tbsp. hot pepper sauce
- 2.5 tbsp coarse salt
- 1.5 tbsp freshly ground black pepper
- 1 and 1/4 cups chopped green onions (12 greens)
- 3 and 1/4 tablespoons finely chopped fresh jalapeno peppers, seeds removed
- 5 ripe Hass avocados
- 1.5 tbsp toasted sesame seeds, optional

Cooking the dish according to the recipe:
- Cut the tuna into 0.5 cm cubes and place in a very large bowl. In a separate bowl, combine the olive oil, lime zest, lime juice, wasabi, soy sauce, hot sauce, salt, and black pepper. Pour the mixture over the tuna, add the green onions and jalapeño, and mix well.
- Halve the avocado, remove the pits, and peel. Cut the avocado into 0.5 cm cubes. Thoroughly mix the avocado and tuna. Add toasted sesame seeds, if using, and season with salt to taste. Refrigerate the mixture for at least 1 hour to allow the flavors to meld. Serve on crackers.
