Preparation:

    Step 1
  • In a medium saucepan, cover the eggs with water to a depth of about 2 cm. Bring to a boil, remove from heat, cover, and let stand for 8 minutes. Drain and transfer the eggs to ice water. Once cool enough, peel and chop.
  • Step 2
  • Meanwhile, in a large nonstick skillet over medium heat, fry the bacon until crisp, about 4 minutes per side. Transfer to a paper towel-lined plate. Crumble the bacon into bite-sized pieces.
  • Step 3
  • In a medium bowl, combine the mayonnaise, sour cream, lemon zest and juice, celery, tuna oil, three-quarters of the green onion, 1/4 teaspoon salt, and a pinch of freshly ground black pepper. Add the tuna and three-quarters of each bacon and eggs and mix gently (not too much). Season with salt and pepper to taste.
  • Step 4
  • Sprinkle the tomato slices with salt and black pepper.

Stack the leaves in pairs and fill each stack with tuna salad. Add a slice of tomato. Sprinkle with green onions, bacon, and egg.
