The Waldorf salad recipe is over a hundred years old, but it remains as popular as ever. It takes its name from the Waldorf-Astoria Hotel in New York City, where it was invented. It features juicy, crisp apples, celery stalks, golden raisins, and toasted walnuts, all dressed with a mixture of low-fat mayonnaise, low-fat yogurt, honey, and lemon zest. This combination of flavors is sure to please. Replacing some of the mayonnaise with plain yogurt makes the salad healthier and lower in calories. Serve in edible lettuce bowls as an appetizer.

Ingredients:

  • 0.5 cup walnut halves
  • 0.5 cups low-fat yogurt
  • 2 tablespoons low-calorie mayonnaise
  • 2 tbsp chopped fresh parsley
  • 1 teaspoon of honey
  • Finely grated zest of half a lemon
  • 2 large crisp apples, such as Gala
  • 2 celery stalks (with leaves), cut into 1 cm pieces (chopped leaves)
  • 1/4 cup golden raisins
  • Juice of half a lemon
  • 1 head of lettuce, trimmed, washed and dried
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 175°C.

    Place the walnuts on a baking sheet, spread them out, and toast in the oven for 8-10 minutes. Cool and break the nuts into small pieces.
  • Step 2
  • Combine yogurt, mayonnaise, parsley, honey and lemon zest in a large bowl and season generously with pepper.
  • Step 3
  • Halve the apples, core them, and cut them into 2cm pieces without peeling them. Add the apples, celery, and raisins to a bowl, drizzle with lemon juice, and toss with the dressing. Cover and refrigerate until ready to serve.
  • Step 4
  • When ready to serve, toss the walnuts into the salad. Arrange the lettuce leaves on a large platter or divide them among four plates. Spoon the salad onto the lettuce leaves and serve.
