A humble lettuce bowl can be both the perfect party appetizer and a stunning weeknight dinner. It weighs next to nothing, is low in calories, and yet adds healthy fiber to any filling. Fill the lettuce bowls with warm Asian teriyaki chicken salad and serve them on a tray or large platter. For serving, choose the firmer, inner leaves of the lettuce.


Ingredients:

  • 1 package (280 g) chilled cooked teriyaki chicken breasts
  • 1/4 cup freshly squeezed lime juice (from about 2 limes) + lime wedges for serving
  • 1 tbsp. vegetable oil
  • 1 tsp. dark sesame oil
  • 1 cup crumbled rice cakes (about 2 pcs.)
  • 0.5 cup fresh coriander leaves, coarsely chopped
  • 0.5 cup fresh mint leaves, coarsely chopped
  • 0.5 cups roasted peanuts, crushed
  • 4 green onions, thinly sliced
  • 1 medium carrot, thinly sliced ​​into strips
  • Half a cucumber, peeled and seeded, cut in half lengthwise and thinly sliced
  • Half a yellow bell pepper, thinly sliced ​​into strips
  • 24 leaves Boston or Bibb lettuce (about 2 heads)
  • 2 tablespoons toasted sesame seeds
  • Asian garlic chili sauce, such as Sriracha, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Reheat the chicken according to package directions. Let cool slightly, then cut into medium cubes.
  • Step 2
  • In a large bowl, combine lime juice, vegetable oil, sesame oil, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Add the chicken, rice cakes, cilantro, mint, peanuts, green onions, carrots, cucumber, and bell pepper and mix well.
  • Step 3
  • Place 12 lettuce leaves on a serving platter and top each with another leaf. Arrange the chicken salad over the lettuce leaves and drizzle with Sriracha sauce, lime juice, and sesame seeds.
