Kulfi Kulfi is a frozen milk dessert made from condensed or evaporated milk. Unlike regular ice cream, kulfi is denser and creamier. Traditional Indian ice cream flavorings include spices and pistachios. Although the original kulfi recipe involves simmering the milk for a long time on the stove, you can significantly simplify the process by making the dessert using a mixture of sweet and unsweetened condensed milk and cream.

Earl Grey tea is a perfect ice cream flavoring. Its bergamot aroma pairs beautifully with spicy cardamom. Serve the Indian ice cream on sticks or arrange it on a plate to form a dome and sprinkle with chopped pistachios.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 340 g unsweetened condensed milk (concentrated milk)
  • 4 Earl Grey tea bags
  • 0.5 tsp ground cardamom
  • 400 g of condensed milk with sugar
  • 1 cup heavy cream
  • A handful of finely chopped pistachios, plus a few extra for serving

Cooking the dish according to the recipe:


  1. Pour unsweetened condensed milk into a small saucepan and heat until bubbles form around the edges.
  2. Meanwhile, remove the labels from the tea bags and place them in the milk. Stir in the cardamom. Once the milk boils, turn off the heat, cover the tea bag, and let it steep for 30 minutes.

  3. Strain the milk into a large bowl. Stir in the sweetened condensed milk, heavy cream, and pistachios. Pour the mixture into ice cream molds, small bowls, or a large bowl. Cover the bowls with plastic wrap to prevent the cream from forming a skin. Freeze overnight.
  4. Before serving, run hot water over the ice cream molds to release the ice cream. You can do the same with the ice cream bowls if you want to scoop them out and serve them in a dome shape. Sprinkle with crushed pistachios, if desired, and serve.
