A very unusual version of the Mexican appetizer guacamole, perfect for special occasions, and it looks quite impressive. In addition to the basic ingredients of guacamole—avocado, lime juice, cilantro, and jalapeño—add finely diced pears and roasted pistachios. This will infuse the appetizer with contrasting textures of tender avocado, juicy pears, and crunchy nuts. You can use any variety of pear and experiment with flavors. Their sweetness complements the spiciness of the jalapeño. If you prefer a spicier flavor, leave more seeds on the peppers. For a more dramatic presentation, arrange blue corn chips around the guacamole, scoop them up, and enjoy.
