Go back Print version

Time: 5 hours 15 minutes
Complexity: easily
Quantity: 6 tbsp. (1.5 l.)

Homemade ice cream that's delicious and authentic even without an ice cream maker. The ingredients are very few and all natural. For simple vanilla ice cream, combine whipped cream with condensed milk and vanilla and freeze in a baking pan. You can leave it as is if you prefer a simple flavor, or stir in any of the suggested toppings while it's slightly frozen: Oreo cookies (or similar), crispy breakfast cereal, or lemon curd shortbread mix.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

Ice cream

  • 400 g of condensed milk with sugar
  • 2 tsp vanilla extract or vanilla paste
  • A pinch of fine salt
  • 2 cups heavy cream, cold

Flavor options

  • Cookies and cream: 12 chocolate cream sandwich cookies, crushed
  • Crispy Cereals: 1.5 cups cinnamon-flavored crispy cereal (breakfast cereal), crushed
  • Cookies and lemon: 0.5 cup canned lemon curd and 1 cup of crushed shortbread cookies
  • Special equipment: a 22 x 12 x 7 cm metal loaf pan, chilled

Cooking the dish according to the recipe:

  1. Ice cream: In a large bowl, combine condensed milk, vanilla and salt.
  2. Using a mixer on medium-high speed, beat the heavy cream until stiff peaks form, about 2 minutes. Using a rubber spatula, fold about 1 cup of the whipped cream into the condensed milk mixture, then fold this mixture into the remaining whipped cream. Pour into a chilled 9 x 5 x 3-inch (22 x 12 x 7 cm) metal pan, cover, and freeze until thick and creamy and slightly soft, about 2 hours. Spoon in any of the suggested toppings. Cover and return to the freezer for at least 3 hours, or until firm.
