Pineapple-apricot glaze - detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • Finely grated zest and juice of 2 limes
  • 8 thin slices of ginger
  • 2 cups unsweetened pineapple juice
  • 1 cup apricot jam
  • 1/4 cup Dijon mustard

Cooking the dish according to the recipe:


  1. Combine lime juice, ginger, and pineapple juice in a saucepan. Bring to a simmer and cook until the liquid has reduced to 1/2 cup, 8-10 minutes. Strain, then stir in the lime zest, apricot preserves, and Dijon mustard.
  2. Pineapple-apricot glaze (pictured below) is perfect for glazing meats and vegetables.
