Time: 10 min.
Complexity: easily
Quantity: 1 cocktail

The "Three Dots, Dash" embodies all the hallmarks of a traditional exotic cocktail: a blend of citrus flavor, honey and almond sweetness, spice, and, of course, plenty of rum. The drink typically blends several types of aged rum. Before serving, the cocktail is generously garnished with flowers, pineapple leaves, and anything else tropical-style, but its most important garnish is three dots (such as maraschino cherries) and a dash (an oblong piece of pineapple) skewered on a cocktail skewer.

Recipe:

Combine 45 ml of aged cane rum, 15 ml each of mixed aged rum, lime juice, orange juice, and honey syrup, 7 ml each of Velvet Falernum and Pimento Dram liqueur, and a splash of Angostura in a shaker with ice; shake well. Strain into a glass filled with ice. Garnish with a cocktail skewer topped with three maraschino cherries and a pineapple wedge.

Note

To make simple sugar syrup, heat equal parts granulated sugar and water in a saucepan until the sugar is completely dissolved; let cool. Demerara sugar or honey can be used in place of regular granulated sugar.
