Despite its simplicity, this meat looks festive and will impress your guests with its flavor and aroma. A whole cut of pork shoulder is rubbed with a mixture of olive oil, crushed garlic, salt, and black pepper and roasted in a roasting pan on a grill rack, allowing the heat to circulate freely on all sides, creating a delicious crust. The meat is roasted at a high temperature for the first 20 minutes to seal in all the juices, then the oven temperature is reduced, and the pork can be forgotten for a few hours. Slice the finished shoulder thinly and serve with side dishes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1 pork shoulder weighing 2 kg.
  • 3 tbsp. l. olive oil
  • 3 tablespoons chopped garlic

Cooking the dish according to the recipe:


  1. Preheat oven to 220°C.
  2. In a small bowl, combine olive oil, garlic, salt, and black pepper. Rub the mixture over the entire pork shoulder.

  3. Place the meat on a rack set in a roasting pan. Roast for 20 minutes, then reduce the oven temperature to 325°F (160°C) and continue roasting until a meat thermometer inserted into the blade registers 185°F (85°C), about 4 hours.
  4. Remove the pork from the oven and let it rest until cool, about 30 minutes.
