Ear cookies (or Palmiers) are perhaps the simplest homemade pastry, perfect even for kids. All you need is a sheet of store-bought puff pastry, sugar, and ground cinnamon. Roll the dough out over the sugar mixture until it adheres and presses firmly into the dough, then follow the step-by-step instructions in the recipe to roll the sheet and cut into "ears." The dough bakes quickly, allowing the sugar to caramelize on the surface of the cookies. The cookies turn out crispy, crumbly, and delicious, and the aroma in your kitchen will be magical.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

- 1 sheet puff pastry, defrosted
- 1 cup sugar, divided
- A pinch of coarse salt
- 1/4 teaspoon cinnamon

Cooking the dish according to the recipe:
- Preheat oven to 230°C.
- Mix 0.5 cups of sugar with coarse salt and pour onto a flat surface, such as a cutting board or marble. Place a sheet of puff pastry on top of the sugar mixture.
- Mix 0.5 cups of sugar with cinnamon and spread evenly over the puff pastry. Don't just sprinkle it, spread it in an even layer. Lightly roll the dough with a rolling pin into a 32 cm square, pressing the sugar into the top and bottom. Fold the sides of the square toward the center, bringing them halfway to the middle. Fold them again so the two flaps meet exactly in the center of the square.
- Then fold one half over the other, like closing a book. You'll have six layers. Cut the dough into 2cm-thick slices and place them, cut-side up, on parchment-lined baking sheets.
- Bake the cookies for 6 minutes or until the sugar caramelizes, then flip them with a spatula and bake for another 3-5 minutes, until the other side is caramelized. Transfer them to a wire rack to cool.
