You'll need a 2.5-liter bowl or small salad bowls. Layer each layer with one large salad spoon. The sauce makes 8 servings.

1 layer: hummus
Place 3/4 cup of hummus, previously fried with red pepper, on the bottom.

2nd layer: Kalamata olives
Remove the pits and coarsely chop 1/3 cup.

Layer 3: Grilled vegetables
Slice 1 small eggplant and 1/2 a medium zucchini lengthwise into 1/2-inch-thick slices, brush with olive oil, and season with salt. Grill over medium-high heat, turning occasionally, until cooked through, about 8 minutes. Cool. Cut into large pieces.

Layer 4: Tzatziki (Greek sauce)
Combine 1/2 cup Greek yogurt and diced cucumber, add 1 tablespoon each lemon juice and olive oil, and season with salt and pepper to taste.

Layer 5: bulgur (wheat groats)
Bring 1/3 cup of water to a boil, add 1/3 cup of bulgur, season with salt and pepper, and simmer, covered, for 10 minutes. Add 1 teaspoon of olive oil and fluff with a fork, then let cool.

Layer 6: tomatoes
In 3 chopped plum tomatoes Add 1/4 cup each chopped mint and parsley, 2 tablespoons finely chopped red onion, and 1 tablespoon each olive oil and lemon juice.

Layer 7: feta cheese
Crumble 85g (about 3/4 cup) of the flour on top.
