These crispy green shamrocks are a delicious and beautiful appetizer for St. Patrick's Day. They look stunning and are surprisingly easy to make. All you need is store-bought puff pastry, pesto sauce, and an egg. The dough is rolled and cut like for ear cookies, then the ears are assembled into shamrocks, held together with a beaten egg, and baked.

To make this shamrock appetizer, you only need three ingredients: puff pastry, pesto and an egg.

On a floured work surface, roll out a sheet of thawed puff pastry into a 12x14 inch rectangle and cut a 1/2 inch strip from one long side (for the stems). Spread pesto on the rectangle, then fold both long sides in to meet in the center. Cut the log into 1/2 inch-wide slices and pinch the bottom of each slice to form a heart shape. Arrange three hearts next to each other on a parchment-lined baking sheet to form shamrocks. Secure them with beaten egg. Cut the remaining strip of pastry into stems; press lightly onto the shamrocks and brush the stems with beaten egg. Bake at 400°F (200°C) for about 15 minutes.
