A recipe for a pancake cake with muesli, plums, and cream cheese and whipped cream.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3/4 cup granola (no dried fruit), plus extra for sprinkling
  • 2 plums, finely chopped
  • 2.5 cups of milk, plus a little more if needed
  • 1/4 cup heavy cream
  • 1.5 cups of flour
  • 6 tbsp (90 g) unsalted butter, melted and slightly cooled, plus more for greasing the pan
  • 1 cup whipped soft cream cheese
  • 1/2 tbsp. apricot or plum jam
  • 2 tablespoons of sugar

Cooking the dish according to the recipe:


  1. In a blender, combine the muesli and 1 cup of milk and blend until almost smooth. Add the remaining 1.5 cups of milk, flour, and melted butter and blend until smooth.

    Pour the mixture into a bowl, cover, and let sit for 1 hour. (You can prepare the mixture in advance, refrigerate it overnight, and then bring it to room temperature before cooking.)
  2. Heat a 9-inch nonstick skillet over medium heat and grease it with butter. Pour 1/4 cup of batter into the skillet, spreading it evenly over the entire surface. (If the batter is too thick, add a little milk before making the next pancake.)

    Fry the pancake for 1-2 minutes until golden brown. Carefully flip the pancake and continue cooking on the other side for another 30-60 seconds, until golden brown. Transfer the pancake to a baking sheet lined with parchment paper.

    Fry the remaining pancakes, brushing the pan with butter and adjusting the temperature as needed.

  3. Form the cake: Set aside 1/4 cup cream cheese for the top of the cake. Place one crepe on a plate and spread it with cream cheese. (If the cream cheese doesn't spread easily, microwave it for 15-20 seconds.)

    Sprinkle with a little muesli. Place the next pancake on top and spread it with jam. Repeat with the remaining pancakes, alternating layers of cream cheese and muesli with jam. Finish the cake with a pancake.
  4. In a small bowl, combine the reserved 1/4 cup cream cheese, heavy cream, and 1 tablespoon sugar. Beat until smooth. The mixture should thicken slightly.

    In a microwave-safe dish, combine the plums and the remaining 1 tablespoon of sugar. Microwave for 2 minutes. Spread the top of the crepe cake with the cheese mixture and plums, and sprinkle with granola. Cut the cake into portions.
