Matzo Dumpling Soup

This classic dumpling soup is a dish that's sure to cure any ailment. Using chicken fat from the broth and sparkling water, you'll get incredibly light dumplings.

Arroz caldo

This thick Filipino soup gets its rich flavor from ginger and roasted garlic. Saffron, a Spanish influence on Filipino cuisine, adds a golden hue. If you can find calamondins, a small Filipino lime, you can substitute them for regular limes.

Samgyetang

This simplified version of a stimulating Korean soup uses ginger and shallots in the broth, and replaces the classic sticky rice with regular steamed rice. Traditional samgyetang is made with a whole young chicken or Cornish hen, ginseng root, and jujube (also known as Chinese or Korean dates). It is typically prepared in the height of summer to "fight fire with fire," during the hottest days of the lunar year.

Ajiaco

This Colombian soup is served in Bogotá restaurants and is considered "comfort food." It contains three different types of potatoes, but we've simplified the recipe to use two (Yukon Gold and purple potatoes, though the latter can be substituted with Red Bliss). The toppings add a bright note and liven up the soup.
