Jeff Mauro's holiday cookies were inspired by the recipe for spumoni, a traditional Italian dessert made with layers of ice cream (cherry, pistachio, chocolate, or vanilla) topped with candied fruit or nuts. Jeff gave this Italian classic a twist, infusing these unforgettable flavors into spumoni cookies, topping them with chocolate chips, pistachios, and candied cherries.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 tbsp and 2 tbsp baking flour
  • 0.5 tbsp baking powder
  • 1/4 tbsp table salt
  • 170 g salted melted butter (3/4 cup)
  • 1 cup light brown sugar
  • 0.5 cup granulated sugar
  • 1 egg plus 1 egg yolk
  • 1 teaspoon almond extract
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips (granules)
  • 1 cup ground pistachios
  • 0.5 cups candied cherries

Cooking the dish according to the recipe:


  1. Preheat oven to 160C. Line 2 baking sheets with parchment paper.
  2. Combine flour, baking powder, and salt in a small bowl. Let the mixture sit for a while.

  3. In a large bowl, beat the butter, light brown sugar, and granulated sugar until smooth. Add the whole egg, egg yolk, almond extract, and vanilla extract. Mix until smooth.
  4. Using a rubber spatula, fold the flour mixture into the sugar-egg mixture, little by little. Add the chocolate chips, pistachios, and cherries, and mix well.
  5. Roll the dough into 1/4 cup balls and place them on the prepared baking sheets, spacing them 2 inches apart. Bake for 10 minutes. Rotate the baking sheets and continue baking until light golden brown, another 8 to 10 minutes. Let the cookies cool.

    Enjoy this delicacy on Christmas morning with a cup of hot coffee and in a good mood.
