Samdang is an essential part of any Korean barbecue. It's a savory, thick paste that can be used as a dip for fresh vegetables or eaten as a sauce with grilled meat wrapped in lettuce. The simplest version of samdang is a mixture of fermented soybean paste and gochugaru pepper. But adding toasted sesame seeds and fresh chili peppers to the paste creates a more complex and profound flavor.
