Homemade cobbler pie topped with cookies.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Pie

  • 900 g peaches, peeled, pitted and thinly sliced
  • 450 g plums, peeled, pitted and thinly sliced
  • Butter for greasing the pan
  • 2/3 cup brown sugar
  • 1 tbsp. honey
  • 1 tsp grated peeled ginger
  • A pinch of salt
  • 1/4 cup premium flour

Cookie

  • 1 and 2/3 cups all-purpose flour, plus more for rolling out the dough
  • 1/4 cup sugar
  • 1.5 tbsp baking powder
  • 1/8 tsp salt
  • 6 tablespoons chilled butter, cut into small cubes
  • 2/3 cup sour milk
  • Sugar for sprinkling

Cooking the dish according to the recipe:


  1. Preheat oven to 180°C. Grease a shallow 2.5-quart baking dish.

    Preparing the fillingCombine the peaches and plums in a medium bowl with the brown sugar, honey, ginger, and salt. Add the flour and stir. Pour the batter into the prepared baking pan.

    Let's cook chopped doughCombine the flour, sugar, baking powder, and salt in a medium bowl. Beat in the butter with your hands or a pastry blender until the mixture resembles coarse meal with pea-sized pieces of butter. Add the buttermilk and mix with a fork.
  2. Let's make cookiesPlace the dough on a lightly floured surface and roll it in flour. Roll out the dough to a thickness of 1 cm. Using a knife or cookie cutter, cut out 5 cm cookies. Roll out the scraps into layers and cut out cookies as well.

    Place the cookies on top of the filling. Top with buttermilk and sugar. Bake until the cookies are golden and the filling is bubbly, about 50 minutes.

    In this homemade pie Peaches can be replaced with nectarines.
