Unsweetened cookies made from shortcrust (chopped) dough

Trisha Yearwood's 30-Minute Savory Cookies are made with just a few ingredients. You can make them soft or crisp, depending on how close you space them during baking. These cookies are made with a shortcrust pastry dough made with margarine and kefir (buttermilk).


Ingredients:

  • Cooking spray
  • 4 tablespoons of margarine
  • 2 tbsp. self-raising flour (see chef's tip below), and a little extra for sprinkling
  • 3/4 cup sour milk
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 230°C (430°F). Lightly grease a baking pan with nonstick spray.
  • Step 2
  • Using a pastry cutter, chop the margarine and mix it with the flour until the mixture resembles coarse flour. Using a fork, mix in the sour milk to form a soft dough. Continue beating with a fork until all the flour is incorporated. Then, place the dough on a lightly floured board and knead it 3-4 times until soft and pliable.
  • Step 3
  • Using your hands or a rolling pin, roll the dough out to a thickness of approximately 1 cm. Using a floured cookie cutter, cut out cookies about 6-7 cm in size. Then, place them in the cookie cutter, spacing them 2 cm apart for crispy edges or almost touching for softer ones. Bake the unsweetened cookies until golden brown, 10-12 minutes.

    Chef's tip: If you can't find self-rising flour, substitute 2 cups all-purpose flour with 3 teaspoons baking soda and 1/4 teaspoon salt.
