Note *
Classic unleavened dough is made with natural butter (containing 50-85% milk fat), which makes up at least 24% of the recipe. The dough is made from four simple ingredients: wheat flour, butter, sugar, and salt. The texture of the cookies is crisp, crumbly, and brittle. Although early references included yeast foam, the cookies have retained their universal texture and flavor.
1. Beat 220 g of butter with 1/4 cup of granulated sugar and 0.5 cup of powdered sugar until fluffy.
2. Mix 2 cups of flour with 1 teaspoon of salt, then stir into the butter mixture and knead the dough.
