Cherry tomatoes are slowly sautéed in olive oil until almost completely bursting, then served on toasted slices of bread spread with yogurt and Parmesan cheese. For a more tart flavor, add chopped capers to the yogurt. The combination of sweet and spicy tomatoes with the savory spread is simply delicious! Serve these sandwiches as an appetizer with wine.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 4 cups cherry tomatoes
  • 1/4 cup olive oil
  • 3 cloves garlic, crushed
  • 2 sprigs of fresh thyme
  • 4 thick slices of country bread
  • 0.5 cup Greek yogurt
  • 1/4 tbsp. grated parmesan
  • 1 tbsp chopped capers

Cooking the dish according to the recipe:


  1. Position a rack in the upper third of the oven and preheat the oven to grill mode.
  2. Place the tomatoes in a large, cold skillet with olive oil, garlic, thyme, and season with salt and black pepper. Cook over medium heat until the tomato skins burst, about 20 minutes.

  3. Brush the bread with the oil from the skillet and grill, turning occasionally, until golden brown on both sides, about 1 minute. Mix the yogurt with the Parmesan and capers, if using. Season with salt and pepper to taste. Spread the yogurt and Parmesan on the toasts, top with the tomatoes, and sprinkle with freshly ground black pepper.
