These stuffed cherry tomatoes are a wonderful combination of flavors and textures that everyone will love. The rich flavor of walnuts is accented by Parmesan cheese, zesty arugula, and sweet tomatoes. Serve these stuffed cherry tomatoes as a refreshing appetizer before a hearty dinner. They're delicious without being heavy.

Ingredients:

  • 3/4 cup fresh arugula leaves, coarsely chopped
  • 0.5 cup (60 g) coarsely chopped walnuts, toasted
  • 0.5 cup finely grated Parmesan
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 tsp. grated lemon zest
  • 1/8 tsp salt
  • 36 cherry tomatoes
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Toss arugula with walnuts, cheese, olive oil, vinegar, and lemon zest; set aside.
  • Step 2
  • Cut the tops off the tomatoes. Using a small spoon (espresso spoon) or the handle of a teaspoon, carefully remove most of the seeds and pulp, being careful not to pierce the skin underneath. Lightly salt the inside of the tomatoes. Stuff the tomatoes with the walnut and arugula mixture. Serve at room temperature.

    Note:


    Toast walnuts in a large nonstick skillet over medium heat, stirring frequently, until golden brown, 3 to 5 minutes.

    To achieve a truly Italian flavor, use real Parmesan cheese. It's more expensive than domestic Parmesan, but it has a wonderfully rich, nutty flavor.
