For this recipe, you'll need large baking apples, such as Golden Delicious, Rum, or Honey Crisp, as they'll soften and stay together after cooking. Their sweet and tart flavor pairs beautifully with the rich, sweet and spicy filling. Carefully hollow out the apples, leaving the walls intact, and fill them with a crunchy mixture of walnuts, dried cranberries, and oats. Cook in a slow cooker until soft. The result is a fruity dessert with the flavor and aroma of apple pie. Serve with a scoop of ice cream and a drizzle of maple syrup.


Ingredients:

  • 3/4 cup walnuts, toasted and chopped
  • 0.5 cup chopped dried cranberries
  • 1/3 cup brown sugar
  • 1/3 cup oatmeal
  • 3 tbsp (45 g) butter, cut into small pieces
  • 1 tbsp. freshly squeezed lemon juice
  • 0.5 tsp ground cinnamon
  • 4 large or 6 medium baking apples (such as Rome, Golden Delicious, or Honey Crisp)
  • 1 cup apple cider
  • Vanilla ice cream and natural maple syrup for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine walnuts, cranberries, brown sugar, oats, butter, lemon juice, cinnamon, and 1/2 teaspoon salt and press until moist and crumbly.
  • Step 2
  • Using a watermelon scoop, core the apples, being careful not to damage the bottoms or sides. Fill each apple with the cranberry-nut mixture. Place the apples in a slow cooker and pour in the apple cider. Cover and cook over low heat until the apples are tender but still slightly firm, 3-4 hours depending on the size and variety of apples. (If the apples are smaller, check them after 2 hours; they may cook faster.)

  • Serve each apple whole or halved in a bowl with a scoop of ice cream and a drizzle of maple syrup.
