Cherry tomatoes make the perfect base for an elegant bite-sized appetizer. Scoop out the flesh with a small spoon and fill the resulting bowls with a salad of chicken, apples, and parsley dressed with mayonnaise. To ensure the salad fits neatly into the miniature bowls, cut the ingredients into very small cubes. A pinch of cinnamon and rosemary leaves will add an interesting aroma and flavor. Before stuffing the tomatoes, make sure they stand upright and, if necessary, trim the bottoms a bit to flatten them.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:

  • 2 boneless, skinless chicken breasts (220g each)
  • Water
  • 16 cherry tomatoes
  • 2 Granny Smith apples
  • 1 teaspoon lemon juice to prevent apples from browning
  • 0.5 tsp ground cinnamon
  • 3 tablespoons mayonnaise
  • 2 tsp chopped parsley
  • 16 small rosemary leaves, for serving

Cooking the dish according to the recipe:

  1. Boil the chicken in water and set aside to cool. Carefully trim the tops of the tomatoes (very slightly) and scrape out the seeds. A ¼ teaspoon measuring spoon works well for this. Peel, core, and finely chop the apples, then sprinkle with lemon juice. Finely chop the cooled chicken, season with salt, pepper, and cinnamon, then mix with mayonnaise and chopped parsley. Spoon the chicken salad into the tomatoes and garnish with rosemary leaves.
