"There are so many things I love about this dish. Firstly, everything is cooked in one pan. Secondly, the combination of cherry tomatoes with aromatic herbs like thyme, rosemary, and bay leaf. When roasted, they transform into a rich sauce that's much better than canned tomato sauce. I also love that the sausages are baked rather than fried. Try to choose the best quality, fresh, coarsely ground sausages. Leftovers can be chopped up and mixed with pasta the next day," shares Jamie Oliver.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 kg ripe cherry tomatoes, preferably different colors
  • 2 sprigs each of fresh thyme and rosemary
  • 2 bay leaves
  • 1 teaspoon dried oregano
  • 3 cloves garlic, peeled and chopped
  • 12 raw Italian pork sausages
  • Extra virgin olive oil
  • Balsamic vinegar
  • Sea salt and freshly ground black pepper

Cooking the dish according to the recipe:


  1. Preheat the oven to 190°C (350°F). Use a baking dish large enough to accommodate the tomatoes in a single, tight layer. Add all the tomatoes, herb sprigs, oregano, garlic, and sausage. Drizzle generously with extra-virgin olive oil and balsamic vinegar, and season with salt and pepper.
  2. Stir so that the sausages are on top and place the baking sheet in the oven for half an hour.

  3. Then shake the contents and turn the sausages over. Return to the oven for 15-30 minutes, depending on how done you like your sausages. You'll have a rich tomato sauce. If it's too runny, remove the sausages and place the baking sheet on the stovetop to reduce the sauce to your desired consistency, then return them to the baking sheet.
  4. Enjoy and serve either with some nice warm bread for dipping, or with mashed potatoes, rice or polenta, a green salad and a glass of good wine.
